HOME MADE PUMPKIN SOUP
Nothing say's more than a hot Pumpkin Soup on those cold winter nights. to make this Great Comfort Food Soup you will need;
1 half pumpkin 2 tablespoons brown sugar 2 large brown onions 1 teaspoon allspice i liter vegetable stock 400 ml thick Cream 50gm butter Bacon bits fried (finely chopped) 1 teaspoon mild curry powder
Chop the pumpkin into small cubes and roast in the oven for 20min.
Finely chop the onions and cook in a large saucepan with the butter, with the curry powder, brown sugar and the allspice on a low heat.
Add the roasted pumpkin into the saucepan with onions.
Then add the stock bring to the boil then simmer for 1 hour.on a low heat.
Add salt and pepper to taste.
Once all cooked use a food processor to blend into a fines pulp, place back into the saucepan do not put back onto the heat, and then add the cream stir until mixed trough.
place into a bowl you may add a swirl of sour cream into the soup and top with finely chopped spring onions and bacon bits.

BLUEBERRY MUFFINS
2 Cups of self raising flour 1 cup sugar 1 cup blueberries 1/2 cup vegetable oil 5 large eggs 1/4 teaspoon salt 1/2 cup milk 100 gm melted butter
Preheat your oven to 180
Into a large bowl add the flour, sugar, and the 1/4 teaspoon salt.
Make a well in the middle of the dry mixture and add the eggs, milk, oil and melted butter mix until a nice gooey mixture, this mixture should be wet.
Fold the blueberries into the mixture.
Grease your muffin tray and place a good desert spoon into each muffin well. (you can add other things if you wish like chocolate chips, dried fruit,white chocolate buttons, etc...)
Once the tray is filled place into oven and wait 15 - 20 minutes or until cooked through.
you can eat them hot with butter or let them cool and top them with icing and sprinkles etc... And as always be careful when in the kitchen
